Komatsuna and bacon pancakes

Ingredients (Servings 2)

Pancake mix
125 g
Egg
1
Milk
140 ml
Komatsuna greens
40 g
Bacon (cut into 1 cm squares)
60 g
Vegetable oil
as needed

Recipe

1.
Puree the komatsuna greens and milk in blender. Add the egg, and blend again.
2.
Add the pancake mix, avoid forming clumps. Add the bacon and mix well.
3.
Heat the fry pan over moderate heat. Add the batter from Step 2, and cook for 2 1/2 minutes over low heat.
4.
When bubbles form on surface, flip over, and cook for about 2 minutes on other side. Serve on a plate.
